Anima Negra makes this Mallorcan rosé from the island’s native Callet, a grape long used for light, low-bodied reds. The 2025 ferments for four months in old stone lagares and concrete, showing pale, fresh red fruit with a saline, herbal lift.
Description
Anima Negra was founded by Pere Obrador and Miguel Angel Cerda to work Mallorca's indigenous grapes, among them Mantonegro, Fogoneu and Callet. AN/R was the island's first rosé built on Callet, a thin-skinned variety historically blended into simple young reds. The vines grow on the warm, limestone-influenced soils of the Balearic Islands, where Mediterranean heat is tempered by sea breezes that preserve acidity and aromatic freshness. After a gentle direct press, the juice ferments and rests for around four months in old stone lagares and concrete vats, vessels that hold temperature steadily and add texture without the vanilla and spice of oak. The result is a pale salmon rosé with aromas of redcurrant, wild strawberry and dried Mediterranean herbs. The palate is dry and light, with bright acidity, a faint saline edge from the maritime climate and a clean, savoury finish. At 11.5% the wine stays fresh and easy to drink. Serve at 8 to 10 degrees in a white wine glass. It works well as an aperitif and alongside grilled vegetables, seafood rice and fresh goat cheese.
