Ànima Negra was founded in 1997 by three friends who set out to rescue the indigenous grapes of Mallorca, converting an old dairy farm into a winery. AN is built on Callet with Manto Negro and Fogoneu, low yielding native varieties grown on the island's warm, dry soils under the VT Illes Balears designation. The Mediterranean climate brings reliable ripeness, while sea breezes and cool nights preserve freshness in grapes that can otherwise be light in colour and structure. To compensate, the team uses extended macerations that draw out colour, tannin and phenolic depth from the skins. Ageing runs to seventeen months in French oak barrels followed by two months in cement, where the wine settles and integrates without picking up further wood character. The result is a medium to full bodied red with a deep ruby colour, a nose of ripe black and red berries, dried Mediterranean herbs, leather and a touch of spice, and a palate of supple tannins, warm fruit and a savoury, earthy finish. Serve at 16 to 18 degrees. It pairs well with roast lamb, grilled red meats and aged cheeses.
