Amós Bañeres works at Sant Martí Sarroca in D.O. Penedès, a winemaker committed to the environment in the way he farms and vinifies. Missatge En Una Ampolla is made from Macabeo grown on calcareous clay soils, cultivated organically. Penedès lies inland from the Catalan coast, and its limestone soils and cool nights suit Macabeo, giving a fresh, mineral white with good natural acidity. In the cellar the grapes are destemmed and a portion of the stems is returned during pressing, and fermentation runs with native yeasts, a natural approach that keeps the wine unforced and free of oak. It then rests six months on its lees in stainless steel, which builds a gentle creaminess and a fresh, bready depth while the fruit stays clear and the wine bright. This is a natural wine made for freshness and drinkability. Expect a pale colour and a nose of green apple, pear and white flowers with a light savoury edge, and a clean, saline palate of citrus and orchard fruit with a dough-like note from the lees. Serve well chilled at 8 to 10 degrees. Natural and vegan.
