Bodegas Argueso has aged sherry in Sanlucar de Barrameda since 1822. This Amontillado is built from Palomino, dry and subtle, with hazelnut, aromatic herbs and a distinctive hint of dark tobacco on a savoury palate.
Description
Bodegas Argueso was founded in 1822 in Sanlucar de Barrameda and is best known for its highly regarded Manzanillas, aged in extensive cellars in the historic centre of the town. This Amontillado is made from Palomino grown on the albariza chalk of the Jerez zone. The wine begins its life ageing biologically under flor in the cool, humid maritime cellars of Sanlucar, before the yeast veil fades and it is refortified to age oxidatively. This passage from biological to oxidative ageing defines the Amontillado style, the early flor stage lending finesse and the later contact with air through the solera concentrating the wine and developing its nutty, savoury depth as alcohol converts to acetaldehyde. The colour is amber. The nose is dry and subtle, with hazelnut and aromatic herbs over a distinctive hint of dark tobacco. The palate is savoury and dry, with the delicacy of its Sanlucar origins balanced by oxidative depth and a long finish of roasted nuts and leather. Serve at 13 to 14 degrees in a tulip glass. It pairs well with savoury food and aged cheese.
