Description
Maison AMI was founded in 2014 by Paul Marchand-Perarnau and Willy Roulendes, two childhood friends, in the Maranges Valley at the southern end of the Cote de Beaune in Burgundy. This Bourgogne Aligote is made from Aligote, Burgundy's other white grape, long overshadowed by Chardonnay but valued for its bright acidity and mineral cut. The limestone and marl soils of the Cote de Beaune, together with a cool continental climate, give slow ripening and preserve the grape's natural freshness. The wine is aged on its lees, the spent yeast cells kept in contact with the wine, which adds a little texture and roundness to balance the high acidity. Farming is organic and biodynamic, with native yeast fermentation and minimal intervention in the cellar. The colour is pale with green tints, showing lemon, green apple and white flowers on the nose over a stony, saline note. The palate is crisp and dry, with citrus fruit driven by keen acidity and a clean, mineral finish. Serve at 8 to 10 degrees.
