Description
Amatiteña Origen is a rustic, high proof blanco made at Cava de Oro in El Arenal, in the Tequila Valley of Jalisco, from Blue Weber grown on the Li Rosas field and harvested in 2022. Every bottle is hand numbered, and the producer states there are no additives. It is a markedly assertive lowland style: nectar sweet agave carried at 49% that drinks far smoother than its strength suggests.
The character comes straight from the process. The agave is cooked in a steel oven over direct flame, crushed on a tahona, and fermented open air in wooden tanks with wild yeast and the agave fibres left in, before two passes through a copper pot still. That direct flame cook and the wild ferment give an unusual smoke and an organic, earthy funk for a tequila, with a long finish of pure agave.
