Description
Amatiteña Añejo is a 100% Blue Weber agave tequila produced at Cava de Oro, NOM 1477, in El Arenal in the Jalisco valley. The agave comes from the El Novillero field, planted in 2016 and harvested in 2022, placing this firmly in the lowland Valles style where mineral, earthier character tends to lead.
The piñas are cooked in a direct-flame steel oven, which lends a faint smoke, then crushed on a tahona before open-air wood-tank fermentation with natural yeast and the fibres left in. Twice distilled in copper pot, the amber spirit then rests a year in American white oak that previously held red wine. The result is many dried fruits, caramel and molasses on the nose with a small wisp of smoke, while the palate is oily and full, sweet long-running vanilla and dried fruit holding into the finish. Bottled at 42%.
