Manzanilla La Jaca comes from Álvaro Domecq, who took over Bodega Pilar Aranda in Jerez in 1988. Made from Palomino aged four years in Jerez butts under flor, it is very pale with greenish lights, showing almond, apple peel and a fresh, saline finish.
Description
Álvaro Domecq took the helm of Bodega Pilar Aranda, a long-established house in the Marco de Jerez, in 1988, continuing its traditional approach to Sherry. La Jaca is a Manzanilla made from Palomino grown on the albariza chalk soils of the region, with the wine matured in Sanlúcar de Barrameda where the cool, humid Atlantic climate feeds the flor. The grapes are fermented dry and lightly fortified to around 15 per cent, low enough for the flor to live, then aged about four years in seasoned Jerez butts through the criaderas and soleras. The veil of yeast shields the wine from air, consumes its glycerine and acetaldehyde and leaves it dry and saline while lending a bready, almond-like aroma. The colour is very pale yellow with greenish highlights, a sign of youthful biological ageing. The nose is fresh and subtle, with almond, apple peel and chamomile, and the palate is light, dry and saline with a clean finish. Serve well chilled at around 7 to 9 degrees in a white wine glass. It is a natural aperitif and suits fried fish, prawns and olives.
