    Distilled in 2005 and bottled by the Alistair Walker Whisky Company in 2022 under the Infrequent Flyers imprint, this is a 16 Years Old Allt-a-Bhainne at 62.3% ABV from Pedro Ximenez sherry maturation. The release is one of 634 bottles. Alistair Walker is a former owner of Glengoyne and the BenRiach Distillery Company, and Infrequent Flyers is the flagship single cask line of his independent bottling operation.

    Allt-a-Bhainne ferments malted barley for 48 to 50 hours on Mauri liquid yeast in closed stainless steel washbacks, then double distills through two copper wash stills and two copper spirit stills with steam heating and shell and tube condensers. The short Speyside ferment produces a clean malt forward spirit built as a blend filler for Chivas Regal, Passport and 100 Pipers. New make is reduced with Rowantree Burn water and tankered to Keith for cask filling and maturation, since the distillery holds no warehousing on site.

    Pedro Ximenez is the most concentrated sherry style for cask finishing, drawn from grapes sun dried to raisin stage before pressing. Residual PX sugars and high viscosity wine remnants in the wood drive heavy raisin, fig and dark dried fruit through sotolon and related lactones. The high retained cask strength of 62.3% reflects modest evaporation across sixteen years in the Keith warehouses, preserving fermentation derived compounds alongside the developed sherry character.
