Description
Alipús is the single village social project of Destilería Los Danzantes, begun in 1999 with each bottling made by an independent family at its own palenque. This San Juan del Río expression is built entirely from Espadin and was founded with mezcalero Joel Antonio Cruz, with distillation passed in recent years to his younger cousin Rodolfo Juan Juárez. The reddish and white soils of the site and unusually long fermentations shape its mineral and chalky character.
Espadin pit roasted in the artesanal style picks up earthy and smoky tones, and copper distillation rounds the spirit. Source notes describe fruity, smoky and agave forward flavours with floral lift, a profile likened to a fruit driven whisky. Bottled at 47.5%, the higher proof carries the minerality and the gentle roasting smoke without letting it dominate.
