Description
Fixin lies at the northern tip of the Côte de Nuits, between Dijon and Gevrey-Chambertin, and its reds are known for firm structure and the need for a little ageing to come into their own. Albert Bichot, one of the long-established houses of the Côte d'Or, makes this village Pinot Noir from vineyards on limestone and marl soils, the classic geology of the Côte that gives Burgundy its minerality and fine tannin. The cool continental climate and the wide day-to-night temperature swing hold acidity and encourage slow, even ripening. Farmed with a sustainable approach, the wine spends sixteen months in oak barrels, where the gentle exchange of oxygen through the wood softens the tannins and adds a light spice and toast without masking the fruit. The colour is medium ruby, the nose showing red cherry, wild strawberry, rose, clove and forest floor. The palate is medium-bodied and savoury, with fresh acidity, firm but fine tannins and an earthy, lingering finish. Serve at 16 degrees, decanted if young, with roast duck, game birds or beef.
