Aire de Protos comes from Protos in D.O. Cigales, a Castilian region with centuries of rosado tradition. A blend of Tempranillo, Garnacha and white grapes aged three months on its lees. Pale pink, with white fruit, peach and a fine textured edge.
Description
Protos, one of the established names of Castilla y León, makes Aire de Protos in D.O. Cigales, a region with a long-standing rosado tradition that dates to records from the 10th century and the Castilian court at Valladolid. The blend combines Tempranillo and Garnacha with the white grapes Albillo, Verdejo and Viura. Cigales sits on the high Castilian plateau, where a continental climate with cold nights and gravel and sand over clay soils preserves acidity and gives a pale, fresh style. After pressing, the wine spends three months on its lees, where contact with the spent yeast cells releases mannoproteins that add a fine, rounded texture and a faint bready note while protecting the wine and broadening the mid-palate. The colour is pale pink. The nose is delicate and complex, with white fruit and peach over subtle flowers, light red fruit and a tropical hint. The palate is dry and crisp, the fruit carried on fresh acidity with a gentle lees-derived weight, closing clean. Serve well chilled at 8 to 10 degrees. The added texture suits white fish, shellfish and roast chicken.
