Description
Named for the Styrian dialect word for branches, Aeijst comes from the Thomann family, who distil it on their farm in the green south of Austria, a region far better known for pumpkin oil and Riesling than for gin. They work entirely with organic ingredients, tasting each of their nine botanicals on its own before deciding how it should sit in the whole. It is patient, hands-on work, and the bottle carries that conviction.
The nose is clean and composed, juniper leading with a thread of citrus behind it. On the palate it stays purist rather than plain, dry and balanced with a fine herbal warmth that lingers gently into the finish. Pour it over plenty of ice with a neutral tonic and a strip of lemon peel to let the botanicals speak for themselves.
