Menade makes this organic fortified white in Castilla y León from Palomino and Verdejo, aged under a yeast cap through a criaderas and soleras system. Reaching 15.5 percent, it shows dried fruit, smoky nuances, candied fruit and a saline, savoury depth.

Description
Adorado de Menade comes from the Menade winery in the VT de Castilla y León, made from Palomino and Verdejo in the old Andalusian manner. The wine is built on a solera, a stack of barrels where younger wine is fed to older through the criaderas and soleras method and drawn off in fractions over years. Fruit was picked by hand and the base wine fortified, then left to age under flor, a living cap of yeast that shields the wine from full oxidation. Flor metabolises alcohol and glycerol and throws off acetaldehyde, which is where the green apple and toasted almond character begins. As the veil thins and the wine sees more air, ethanol converts further to give nutty, dried fruit and umami depth. The colour is golden. The nose carries dried apricot, roasted nuts, smoke and candied orange peel. The palate is dry, round and complex, with a distinct salinity and a long savoury finish. Serve at 12 to 13 degrees in a white wine glass.





Additional information
Serve with salted almonds, Manchego and other aged hard cheeses, and slices of cured ham. The saline, nutty character also flatters grilled prawns and simply cooked white fish.
