The Preussische Spirituosen Manufaktur in Berlin Wedding started out in 1875 as a school for distillers, then fell quiet for decades until a microbiology professor and a hotelier coaxed it back to life in 2009. Their Berlin Dry begins with a fine wheat distillate matured for six months, distilled under vacuum to draw the most from each botanical, then settled for a further three to six months in hundred-year-old stoneware vessels that lend it an unusual roundness.
The nose carries juniper threaded with warm spice, garden herbs and a lift of citrus. On the palate it stays gentle but articulate, oranges and lemons brightening a backbone of ginger and allspice, the orange blossom and lavender lending a soft floral edge. The finish is long and easy. Pour it into a G&T with a strip of orange peel to keep the spice glowing.
