Adar is a kosher red from D.O. Ribera del Júcar, made by Elvi Wines from Cabernet Sauvignon, Petit Verdot and Syrah. Eighteen months in oak and a year in bottle give dark plum, spice and a firm, structured frame.
Description
Elvi Wines makes Adar in D.O. Ribera del Júcar in Castilla-La Mancha, a kosher blend of Cabernet Sauvignon, Petit Verdot and Syrah from the high, dry plains south of the Júcar river. The continental climate brings hot days and cool nights that ripen these Bordeaux and Rhône grapes fully while holding acidity. The fruit is sorted on a selection table, then fermented at 25 to 27C over sixteen days in stainless steel under anaerobic conditions with constant movement to extract colour and tannin. A spontaneous malolactic fermentation follows in the same tanks, softening the wine's acidity. It then ages eighteen months in French and American oak followed by twelve months in bottle, the long barrel time fixing colour, smoothing tannin and adding vanilla, spice and a cocoa edge. The wine is deep and dark. The nose shows ripe plum and black cherry with pepper, sweet spice and tobacco, and the palate is full and structured, with firm tannin and a long, savoury finish. Serve at 16 to 18C and decant. It suits roast and grilled red meats.
