Description
Acustic Celler makes this white in Montsant, the mountainous Catalan appellation that rings Priorat, from a field blend of Garnacha Blanca, Macabeo and Xarel lo grown on very old vines close to ninety years of age. Vine age is the defining factor: the ancient roots yield tiny crops of deeply concentrated fruit, giving the wine its weight and depth. Montsant's poor mountain soils and warm days tempered by cool nights add structure and hold acidity. The wine is organically farmed and aged ten months on its lees, and that long lees contact releases mannoproteins that build a full, creamy texture and a savoury complexity without oak dominating. The colour is deep gold. The nose shows white peach, apricot and pear over beeswax, almond and honey, and the palate is full and dry, carrying ripe stone fruit, a nutty, waxy depth and a firm mineral line into a long finish. Serve at 10 to 12 degrees in a wide glass.

Its body and texture suit richer dishes: baked white fish, roast chicken and grilled scallops. The nutty, waxy depth also matches aged hard cheeses such as Manchego, and it works with dishes built on almonds, olive oil and herbs.
