Description
Distilled at Aberfeldy in 2001 and matured 16 years in a single ex Bourbon cask numbered 21371, bottled at the distillery in 2018 at cask strength 57.3% under the Hand Filled at the Distillery programme. Sister cask to the Hand Bottled 15 year cask 21424 from the same 2001 vintage parcel, held one year longer in warehouse and routed through the on site Hand Filled visitor format rather than the pre packaged Hand Bottled sub series.
Long fermentation Aberfeldy wash from the four still configuration, distilled in 2001 under John Dewar & Sons (Bacardi) ownership. Filled into a single ex Bourbon cask and aged 16 years at the distillery's bonded warehouses. Bottled on site at full cask strength 57.3% with no chill filtering and no caramel adjustment, with each bottle filled and labelled by the visitor at the time of purchase.
Sixteen years in ex Bourbon American oak at cask strength produces a well developed working oak signature: vanillin from lignin breakdown at upper moderate levels, cis whisky lactones contributing clearly framed coconut and dill, and furfural plus 5 hydroxymethylfurfural from hemicellulose supplying caramel and toasted cereal. Aberfeldy's house ester profile (ethyl laurate, ethyl myristate, heavier alcohols) drives the heather honey base, with 57.3% holding the full ester load on the nose and the oily mouthfeel intact.
