Two cask numbers along from cask 3 in the visitor centre programme sequence, drawn from the same 1999 vintage and held one year less in the warehouse before on site bottling.

    Distilled at Aberfeldy in 1999 and matured 17 years in a single Oloroso sherry cask, bottled at the distillery in 2017 at cask strength 56.5% under the Hand Bottled at the Distillery programme. 609 bottles released. Cask number 5 in the visitor centre programme sequence, two numbers along from the PX cask 3 release and drawn from the same 1999 vintage parcel held at the distillery's warehouses.

    Long fermentation Aberfeldy wash from the four still configuration, distilled in 1999 in the first year of John Dewar & Sons (Bacardi) ownership. Filled into a single Oloroso sherry cask and aged 17 years before bottling on site at 56.5% with no chill filtering and no caramel adjustment, the Hand Bottled house specification.

    Seventeen years in a seasoned Oloroso butt produces a developed sherry signature: melanoidins from prior Oloroso reduction in the staves contribute walnut and dried fig, ellagitannins and gallic acid from European oak supply the tannin grip and bittersweet chocolate, and sotolon development reaches into baked fruit and aged Cognac depth. Aberfeldy's house esters (ethyl laurate, ethyl myristate, heavier alcohols) drive the heather honey base, with 56.5% holding the full ester load against the sherry frame. Slightly lighter on the palate than the PX cask 3 sibling but with more clearly framed walnut and dried fruit.
