Aberfeldy Exceptional Cask Series 21 Years Old 2002

Distilled at Aberfeldy in 2002 and matured 21 years across three Red Wine casks (numbered 3140, 3144 and 3146), bottled by John Dewar & Sons in 2023 at cask strength 53.9% under the Exceptional Cask Series Small Batch for the German specialist trade. 804 bottles in total. The cask strength bottling sits outside the typical 43% Small Batch standard, with the higher proof and tighter bottle count placing this release closer to the single cask ECS line than the larger 43% Small Batch vattings. The non sequential cask numbering (3140, 3144, 3146) indicates the vatting drew specific casks from across the parcel rather than a continuous warehouse run.

Long fermentation Aberfeldy wash from the four still configuration, distilled in 2002 under John Dewar & Sons (Bacardi) ownership. Filled into three Red Wine casks and aged 21 years at the distillery's warehouses. Vatted for the Small Batch release and bottled at cask strength 53.9% with no chill filtering and no caramel adjustment.

Twenty one years of Red Wine cask maturation across three sister casks at cask strength gives a developed wine chemistry signature: condensed tannins from prior wine contact (proanthocyanidins, polymerised pigments) contribute dried red fruit and structural grip, residual polysaccharides give wine derived sweetness, and the European or American oak supplies vanillin and lactones beneath. Aberfeldy's house esters (ethyl laurate, ethyl myristate, heavier alcohols) hold the heather honey core, with two decades of slow oxidation layering polymerised polyphenols and acetals onto the wine cask frame.
