Long fermentation Aberfeldy wash from the four still post expansion configuration, distilled in 2012 under John Dewar & Sons (Bacardi) ownership. Filled into a single ex Bourbon cask and aged 8 years at Douglas Laing's warehouses. Bottled at the Provenance house specification of 46% with reduced chill filtering and no caramel adjustment.

Eight years in ex Bourbon American oak builds a fresher, more primary ester profile than older bottlings: the cask has had less time to extract heavy lignin breakdown products, so vanillin sits at moderate levels and cis whisky lactones are present but light. What dominates is Aberfeldy's distillate character at relatively young age, with ethyl laurate, ethyl myristate and heavier fusel alcohols giving the honey and beeswax base. Hemicellulose breakdown in the toasted oak adds the soft cereal sweetness and a touch of vanilla. The 46% bottling holds enough strength to keep ester volatility on the nose.
