Distilled at Aberfeldy in 2014 and matured 7 years in a single ex Bourbon cask numbered 412, bottled by The Whisky Cellar in 2022 at cask strength 53.6% under the Private Cellars Selection sub series for the Dutch specialist trade. 235 bottles in total. The Whisky Cellar was founded in 2017 in Edinburgh by Keith Bonnington as a small batch indie bottler, with Private Cellars Selection as their working single cask line focused on cask strength releases.
Long fermentation Aberfeldy wash from the four still configuration, distilled in 2014 under John Dewar & Sons (Bacardi) ownership. Filled into a single ex Bourbon cask and aged 7 years before bottling at full cask strength 53.6% with no chill filtering and no caramel adjustment under the Private Cellars Selection house specification.
Seven years in ex Bourbon American oak at cask strength gives a young, primary spirit profile with limited oak dominance: vanillin from lignin breakdown sits at lower levels, cis whisky lactones contribute a light coconut and dill background, and hemicellulose breakdown supplies the soft cereal sweetness. Aberfeldy's distillate character drives the centre at this age: ethyl laurate, ethyl myristate and heavier fusel alcohols build the bright heather honey and beeswax base, with 53.6% holding the orchard fruit ester character (apple, pear, citrus) on the nose.
