Distilled at Aberfeldy in 2001 and matured 21 years in a single ex Bourbon cask numbered 2923/M, bottled by John Dewar & Sons at 46% under the Limited Edition programme for the global market. The 2923/M cask sub identifier sits within the distillery's broader 2923 batch family, which also produced the 2923/A (15 year ex Bourbon) and 2923/B (18 year Cabernet Sauvignon) wine cask releases. The /M variant within the family is the senior ex Bourbon single cask sibling at the longer age.
Long fermentation Aberfeldy wash from the four still configuration, distilled in 2001 in the early Bacardi era of the distillery. Filled into a single ex Bourbon cask and aged 21 years at the distillery's warehouses. Bottled at 46% with reduced chill filtering and no caramel adjustment, sitting below natural cask strength after two decades of evaporation.
Twenty one years in refill American oak runs the wood extraction to upper development: vanillin from lignin breakdown sits at full concentration, cis whisky lactones contribute clearly framed coconut and dill, and furfural plus 5 hydroxymethylfurfural from hemicellulose supply developed caramel and pastry notes. Aberfeldy's house ester profile (ethyl laurate, ethyl myristate, heavier alcohols) holds the heather honey base through two decades of slow oxidation, with polymerised polyphenols and acetal compounds adding soft tobacco and aged leather to the older profile.
