Distilled at Aberfeldy in 1999 under the new John Dewar & Sons (Bacardi) ownership, the first full year of the post acquisition era at the distillery, and matured in Oloroso sherry casks. Bottled in 2014 by Gordon & MacPhail under the relaunched Connoisseurs Choice series, which that year moved into modernised packaging and an updated specification: higher bottling strengths, reduced chill filtering and a more transparent cask declaration than the 40% format that had carried CC across most of its history.
Long fermentation Aberfeldy spirit from the four still configuration, distilled in 1999 and aged 15 years in Oloroso sherry casks at G&M's Elgin warehouses. Bottled at 46% in the modern CC presentation, with reduced chill filtering and no significant caramel adjustment, reflecting G&M's mid 2010s repositioning of the line.
Oloroso sherry casks at 15 years drive a substantial polyphenol and tannin contribution: ellagitannins and gallic acid from European oak provide the structural grip, melanoidins from prior sherry reduction give the walnut skin, dried fig and dark sugar character, and oxidative acetals contribute baked apple and aged wine notes. Aberfeldy's distillery signature, ethyl laurate, ethyl myristate and heavier alcohols giving heather honey and beeswax, sits underneath rather than competing, providing the soft honey base that catches the dark sherry oxidation products as the spirit moves across the palate.
