Eleven years in ex Bourbon American oak at the cask's natural strength gives a slightly more developed oak signature than the 10 year sibling cask: vanillin from lignin breakdown is fractionally higher, cis whisky lactones contribute more pronounced coconut and dill, and furfural plus 5 hydroxymethylfurfural from hemicellulose carry more developed caramel. The smaller bottle yield indicates higher wood contact per litre, which compresses the extraction faster.
