Description
Distilled at Aberfeldy in 2013 and matured 10 years in a single ex Bourbon cask, bottled by the Scotch Malt Whisky Society under code 60.35 and the character name 'Bienvenue à la pâtisserie'. The 35th Aberfeldy single cask the society has bottled since its founding in 1983, distributed across the society's global branch network. 270 bottles at full cask strength 57.6%.
Long fermentation Aberfeldy wash from the four still configuration, distilled in 2013 under John Dewar & Sons (Bacardi) ownership in the modern operational era of the distillery. Filled into a single ex Bourbon cask and aged 10 years at the society's warehouses. Bottled at full cask strength 57.6% with no chill filtering and no caramel adjustment, the SMWS house specification.
Ten years in ex Bourbon American oak at cask strength produces a younger oak profile than the older SMWS Aberfeldy releases: vanillin from lignin breakdown sits at moderate levels, cis whisky lactones contribute coconut and dill, and hemicellulose breakdown gives the soft pastry sweetness that the panel referenced in the cask name. Aberfeldy's house ester profile (ethyl laurate, ethyl myristate, heavier alcohols) drives a clear heather honey and beeswax base, with 57.6% holding the ester volatility on the nose and the oily mouthfeel intact.
