A.J. Adam makes this Kabinett from 30 to 60 year old Riesling vines on the steep slate of the Hofberg in the Mosel. Low in alcohol at 8 percent, it is delicately sweet, with green apple, lemon and a stony slate edge.
Description
Weingut A. J. Adam is a young estate founded in 2000 at Neumagen-Dhron in the Mosel, run by Andreas Adam, who trained at the highly regarded Weingut Heymann-Löwenstein. The estate works about 3.5 hectares of Riesling, the vines aged between 30 and 60 years and planted on steep slopes above the Moselle. This Hofberg Kabinett comes from weathered slate soils, which drain quickly, store the day's heat and feed back a stony minerality, while the cool northerly climate holds the grapes' high natural acidity. Older vines push deeper roots and give small, concentrated berries with more depth. The fruit is picked at Kabinett ripeness and fermented slowly with native yeasts, then stopped before the sugar is fully converted, leaving a low 8 percent alcohol and a core of light sweetness. There is no oak. The wine is pale with green glints. The nose shows green apple, lemon, white peach and pear over a clear slate, earthy note and a touch of chamomile. The palate is delicately sweet but kept taut and fresh by bright acidity, giving a light feel and a long, mineral finish. Serve well chilled at around 8 degrees, an excellent foil for spiced dishes.
