9+ Selecció 3R comes from Nou de Gaià in the Camp de Tarragona, where winemaker Moisès Virgili i Rovira works with Cartoixà Rojo, a local mutation of the traditional Cartoixà that keeps a faint blush in its skins despite being vinified as a white. The wine is made naturally and organically, without additions to mask the fruit or the site. Fermentation and nine months of ageing take place in stainless steel on the fine lees, a method that keeps the primary fruit and bright acidity intact while the slow breakdown of the yeast cells adds body and a subtle savoury depth. Nothing here comes from oak, so the character is all grape and place. The wine is pale with a green tint, showing pear and green apple on the nose with lemon, white flowers and a trace of fresh dough from the lees. The palate is dry and taut, with citrus peel bite and a clean, mineral finish. Serve well chilled at 8 to 10 degrees as an aperitif or alongside food. It suits shellfish, fresh white fish, green salads and young goat cheeses.
