4 Monos Viticultores farm in the Sierra de Gredos, on the Madrid side of the range, and this wine comes from a single plot at Cadalso de los Vidrios planted to Albillo Real. The soils here are decomposed granite, poor and free-draining, which keeps yields low and forces the vines deep for water. Gredos sits at altitude, so warm days give way to cold nights, and this swing preserves acidity and aromatic detail even as the grapes ripen fully in the mountain sun. Albillo Real is a thick-skinned variety with real texture, and gentle skin contact during fermentation draws phenolic grip and stone-fruit weight into the wine. At 14.5 per cent it is generous, but the granite gives it a taut, mineral spine that keeps it fresh. The colour is bright straw, the nose offers white peach, pear, white flowers and wild thyme, and the palate is broad and textured with citrus peel and a stony, almost salty finish. Serve at 11 to 12 degrees in a larger glass to let it open.
