Description
Habla del Silencio comes from Bodegas Habla in Extremadura, the warm, sun baked southwest of Spain, and blends Syrah, Tempranillo and Cabernet Sauvignon. The hot, dry continental climate ripens the fruit fully, building sugar and colour, which is why the wine reaches 14 percent and shows dark, ripe character. Syrah leads the blend with its black fruit and pepper, Tempranillo adds red fruit and structure, and Cabernet Sauvignon contributes firm tannin and a savoury backbone. After fermentation the wine spends six months in French oak, a short ageing that softens the tannins through slow oxygen exchange and folds in vanilla and a light toast without burying the fruit. The colour is deep cherry garnet with violet at the rim. The nose is generous, with ripe plum, blackberry and red cherry over black pepper, vanilla and a smoky, liquorice note. The palate is full and rounded, with ripe fruit, supple tannins and a warm, spiced finish. Serve at 16 to 17 degrees, and decant briefly if young. It is built for grilled and roasted meats.
