Kustennebel is a star anise liqueur, a North German speciality made by Waldemar Behn and bottled at 21.8%. It is built on a clear alcohol refined with natural flavourings, in particular the essential oils of star anise, which give its characteristic taste, set against a mild creaminess. Presented in its famous foggy bottle, it brings a piece of North German coastal culture to the glass, balancing delicately spicy aniseed flavour with a smooth mouthfeel.
The nose is clear star anise with a fine sweetness and light herbal notes, the palate soft, sweet and harmonious with a typical aniseed character and gentle spiciness, finishing mild, pleasantly warming and long with an aniseed close. Behind the bar it brings sweet aniseed flavour, a soft body and a gentle warmth, which suits a chilled digestif, a shot or an aniseed accent in a dessert cocktail. It is good neat and well chilled, and works in the kitchen over vanilla ice cream or in an aniseed parfait. Serve it cold, or pair it with poppy seed cake or aniseed biscuits.
