Description
Rossbacher Kraeuterlikoer is a herbal liqueur with a long tradition in Austria, built on a recipe of thirty herbs, roots and spices. It is made by maceration, the botanicals infused in alcohol to draw out their oils and flavours gently and fully, which gives the liqueur its balanced bitterness and subtle spicy complexity. Bottled at 32%, it sits firmly in the bittersweet digestif tradition rather than the sweet fruit end of the range.
The nose is spicy and intense with herbal aromas and a slight sweetness, while the palate is full bodied and harmonious, gently bitter with subtle herbal notes that the profile reads as mint, anise, wormwood, gentian and liquorice. The finish is long, warm and pleasantly spicy. In a drink it gives a bitter backbone and aromatic depth that cuts sweetness and adds structure, the way bartenders reach for a herbal liqueur to anchor a stirred build. It shows best neat at room temperature or over ice as a digestif after a heavy meal, and stretches surprisingly well long with tonic or apple juice. Keep a bottle on the back bar for spec work where a bittersweet herbal note is wanted.
