Description
Bonete Raicilla Costa is a coastal Jalisco agave spirit from maestro Joaquin Solis in El Tuito, near Cabo Corrientes, the heart of raicilla de la costa. It is made from 100% Rhodacantha, the maguey also known locally as Mexicano agave, and bottled at 44.8%, the brighter, cleaner end of the raicilla spectrum that the coast is known for.
The agave is roasted in an underground conical oven over oak, milled by hand axe, then fermented in open vats with wild yeast, the ambient ferment driving aromatics and fruit. It is double distilled in wooden pot stills carved from the Oyamel fir, a distinctive coastal vessel that lends its own character. Expect a nose of grass, dill and wood leading to oregano, menthol and black pepper, with a soft, fresh body and a dry finish.
