Aprendiz Mezcal Espadin Joven

Aprendiz Espadin is a joven mezcal from San Juan del Rio in Oaxaca, made by Isaias Martinez alongside his father in law at Destileria Santa Sabia, the home of the Pescador de Suenos family. It is a sibling project built around cultivated Espadin, Agave angustifolia, and aimed squarely at the glass and the cocktail shaker, balanced and approachable rather than fierce.
Production follows the artesanal path that respects the older way of working, the agave pit roasted to draw out its sugars and the smoke that defines the style. The nose is gentle, with the classic roasting smoke and a touch of wood, while the palate runs through herbs, wood and a quiet berry note. Bottled at 40%, it shows the steady, balanced face of valley Espadin and rests comfortably under citrus and ice.
