Description
Los Muertos Joven is an unaged Espadín mezcal from Oaxaca, made in the traditional way from semi cultivated agave harvested at seven to nine years, the point where Espadín carries its fullest sweetness. Espadín is the workhorse of the category, the balanced and approachable backbone against which other magueyes are judged.
The hearts are cooked in an earthen pit fired with mesquite, then fermented in open wooden tanks on natural yeast with pinewood used to fire the still. Double distillation in copper closes the route, a clean alembic finish that rounds the spirit. Expect green aromas reminiscent of Padrón peppers and Mexican herbs alongside ripe fruit, with cooked agave, soft fruit and a measured roasting smoke across the palate. Bottled at 43%, the process running several weeks depending on the season.
