Craneo Mezcal Espadin is an organic, single estate joven from the heart of Santiago Matatlan in Oaxaca, made by David Ravandi, the founder behind 123 Organic Tequila and El Luchador, who has set out to keep the old artisanal distillation methods of the region alive. It is built entirely from the producer's own Espadin, hand selected and grown at around 1700 metres, which gives the light, tame style that also suits tequila drinkers.
The fully ripe pinas are oven roasted before the classic artesanal sequence shapes the spirit. The nose is built around sweet grill smoke and citrus, and the palate stays light and silky, with orange and grapefruit peel, green banana and spun sugar set against a moderately sweet smokiness. The label carries a sacred skull drawn from the Aztec goddess Mictecacihuatl, keeper of the bones, while the spirit draws its character from the Espadin itself. Bottled at 42 percent.
