Description
La Gritona Tequila Reposado is a Blue Weber agave Reposado distilled by Melly Barajas at the small Razazteca distillery, NOM 1533, in Valle de Guadalupe in the Los Altos highlands of Jalisco. The whole operation, from agave to bottle, is run by a small local team of women, and the agave comes from the iron rich red soil of the surrounding highlands, harvested at nine to ten years when sugar production peaks.
The piñas are steam cooked in thick walled earthen ovens, rested, then pressed, with the juice fermented naturally in open steel tanks at the pace set by the local air temperature before double distillation. The spirit then rests eight months in used American whiskey casks. The style is deliberately restrained, with little vanilla or sweetness, leading instead with fresh, vegetal agave and a round, mild finish. Bottled at 40%.
