Alta Azul Blanco is the unaged expression from this Jalisco brand, made from Blue Weber agave grown in the Los Altos highlands, where iron rich red clay and altitude tend toward sweeter, more mineral spirits. Without time in wood it is the fresher and more direct of the range, putting the pure agave front and centre rather than barrel character.
The nose is clear and almost honeyed cooked agave, lifted by lemon and lime zest and a hint of herbs or freshly cut grass. The palate is soft and naturally sweet, with a light mineral note the producer likens to rain on stone, a signature of the highland origin. A discreet white pepper note appears on the finish, kept gentle by the modest 38% strength. Its natural sweetness makes it easy to sip and a forgiving base for a Margarita or Paloma.
