    The London No. 1 is triple-distilled in copper stills for purity and a soft texture, then built up from twelve botanicals including juniper, coriander, almond and cinnamon. What sets this expression apart is the cask: after distillation it rests around three months in barrels that previously held fino sherry for at least ten years, a finish that draws out its bright gold colour and a gentle layer of sherry depth.

    The nose shows fresh juniper laced with spicy cinnamon, a fine almond and coriander note and a whisper of fino. The palate is full and complex, juniper and soft cinnamon balanced by the sherry's subtle sweetness, closing long and smooth with a touch of oak and a pleasant warmth. Serve it in a classic G&T with a lemon slice and a rosemary sprig, or sip it neat over ice beside dark chocolate.
