Rauschen Nordisch Maritim is a love letter to the North German coast, made in the country's north and built around ingredients drawn from the shoreline. Its depth comes partly from the rare bog bilberry, which lends a sweet-sour edge, alongside regional apple, sea buckthorn, lavender and thyme. A fine pinch of sea salt rounds the whole thing off. Distilled five times in a copper still, it keeps a clean, smooth mouthfeel.
The nose is herbal and coastal, thyme and lavender over apple and sea buckthorn with a hint of salt air. The palate balances sweet and sour berry freshness against fruity apple and gentle herbal spice, that saline note threading underneath. The finish is long and refreshing with lingering sea salt. Serve it with a Mediterranean tonic and a sprig of thyme.
