Needle Blackforest Distilled Dry Gin

Needle takes its name and its character from the Black Forest, where spruce needles are gathered to give the distillate a resinous, evergreen depth you won't find in most gins. Distilled gently in Germany, it sets those needles alongside a familiar cast, juniper, coriander, cinnamon, ginger, lavender and lemon peel, so the forest note reads as nuance rather than novelty. The result feels rooted in its landscape, earthy and quietly aromatic.

The nose is fresh juniper with hints of citrus, lavender and a low spiciness. On the palate it's soft and aromatic, juniper and spruce needle braided with spicy herbs and a light citrus brightness, before a long, faintly resinous finish carries a cool herbal freshness. Serve it with Indian tonic and a sprig of rosemary, or chill it lightly to coax out the pine.
