Description
Versailles El Dorado Special Cask Finish Portuguese Red Wine Casks 2006 is a distillery bottling from DDL's limited cask finish range, built on the single wooden pot still at Versailles, the robust, tannic, raw-wood marque between Enmore and Port Mourant. Like the rest of the series it is declared unsweetened and bottled at full strength, setting it apart from the dosed flagship El Dorado range.
The rum was finished in Portuguese red wine casks, which bring fruit and a darker tone to the spirit. The nose is woody and earthy with coffee and vanilla, while the palate turns to wood, chocolate, dried fruit and a light coffee note. The finish stays woody with vanilla, chocolate and raisin. The wine and fruitiness are clearly present, though the finish sits a touch off-balance against the dry Versailles core. At 57.8% with no added sugar, this is an honest, wood-and-wine Demerara that favours depth over polish.
