This Mombacho single cask is a 2003 Nicaraguan rum finished in a Sauternes wine cask, a column-distilled molasses spirit from a country whose aged rums tend to run cleaner and drier than the Spanish-style average. The dessert-wine finish is the talking point, layered over twelve years of ageing.
The aroma is the more characterful side, with chocolate, a touch of glue-like ester funk and damp wood signalling a spirit with some grip beneath the polish.
