A cask-strength Velier Foursquare from the 2005 vintage, 16 years of Barbados ageing giving coconut, caramel and vanilla over dark chocolate and polished oak, dry and unsweetened at 61% with the house balance turned up in structure and length.
Description
This is a Foursquare single blend from the 2005 vintage, bottled by Velier as part of its acclaimed collaboration with Richard Seale's St Philip distillery and named for the photographer Elliott Erwitt. Matured 16 years on Barbados and presented at cask strength, 61%, it pairs Velier's full-proof philosophy with Foursquare's strict no-additives stance.
Foursquare blends rich double-retort pot still rum with cleaner twin-column distillate, and here that marriage, aged in ex-bourbon oak under tropical heat, gives the classic Bajan signature in concentrated form. Coconut, caramel and vanilla lead, with dark chocolate, cinnamon and a roasted, polished-oak depth behind them. It is dry and unsweetened throughout, the strength adding grip and a long, warm finish rather than aggression. A balanced, contemplative Barbados rum for drinkers who want the house style with more structure, taken neat or with a few drops of water.
