Isautier is one of Reunion's oldest rum houses, and this seven year old is a traditional rather than agricole rum, built from molasses rather than fresh cane juice. That distinction matters: it sits in the lighter, more rounded camp typical of the island's molasses output rather than carrying the grassy snap of a French-island blanc.
Column-distilled and bottled unsweetened at a gentle 40%, it gains an extra layer from time in cognac casks. The nose is fruity with dried and red fruits and a spice lift, the palate turns spicy with brown sugar, caramel and light wood, and the finish stays fruity and woody. It drinks dry and approachable for a molasses rum of this strength, with enough character to reward neat sipping while slotting easily into classic Caribbean cocktails.
