Cimborazo Cimborazo Rum 12

Cimborazo Rum 12 is an Ecuadorian molasses rum distilled on a column still by the Cimborazo distillery, named for the country's highest peak. Bottled at 40%, it carries a youthful intensity and a notably dry, oak led character that sets it apart from the softer sweetened rums of the region.

The nose is nutty and woody with red fruit and a clear barrel note, and the palate doubles down on oak, leather and a charred, burnt edge that gives it real grip. The finish softens, turning velvety and mild with molasses and a syrupy sweetness underneath. There is more character here than the gentle strength might suggest, a dry, leathery, wood forward rum that rewards those who like intensity and char.
