Jaguara, a 15 year old Guyanese dark rum without a named distillery or bottler, drawn from the column and pot stock that all originates at the Diamond distillery. It sits at the soft, sweet end of the Demerara spectrum, built for easy drinking rather than for showcasing the heritage stills.
Maturated from molasses in ex-bourbon wood at 45%, it noses on brown sugar, a caramelised note, raisin and molasses, then delivers a sweet palate of caramel, vanilla and oak, finishing soft, creamy and raisined. This is a sweetened rum, so the smoothness comes from added sugar as much as from age, and it reads closer to Zacapa or Diplomatico territory than to the dry, full-proof indies.
