Saint James Fleur de Canne Blanc

Saint James has made rum in Martinique since 1765 and is among the island's largest houses, instantly recognisable by its squared bottle. This Fleur de Canne Blanc is an unaged agricole from fresh-pressed sugarcane juice under the island's AOC, unsweetened and bottled at a classic 50 percent.

Distilled on a creole column kept low to preserve the green cane character, it is fresh and clean: sugarcane, citrus and lemon on the nose, with a vegetal, peppery palate carrying that fresh-cut grass note. The finish stays vegetal and mineral with a lime edge. This is a crisp, dry mixing white rather than a contemplative neat pour, and it really shines in a Ti Punch or a simple longdrink where the cane and citrus snap come through. A reliable, vegetal Martinique blanc.
