Trois Rivières Rhum Ambré Eleve Sous Bois

Trois Rivieres Rhum Ambre Eleve Sous Bois is a young Martinique agricole made from fresh pressed sugar cane juice. The eleve sous bois designation marks the ambre tier of the AOC, cane spirit rested in oak for at least a year but under three, giving a light golden colour and a gentle wood influence rather than full maturity. Bottled at 40%, it is an everyday agricole pitched at cocktails and casual drinking.

Distilled low on a creole column to keep its grassy cane congeners, then briefly rested in ex bourbon wood, it stays light and straightforward: vegetal and fruity notes, fresh sugarcane and a little spice, dry and unsweetened throughout. The short ageing and modest strength make it more of a mixing rum than a sipper, and it comes into its own in a Ti' Punch or a longer agricole cocktail where its clean cane character carries the drink at a friendly price.
