Pere Labat is the rum of the Poisson distillery on Marie-Galante, the small Guadeloupe island whose blancs are traditionally bottled high, and this 59% white sits right in that local custom. It takes its name from the Dominican missionary who helped refine cane distillation in the islands, and it remains a reference point for unaged white rum made from fresh cane juice rather than molasses.
Distilled on a column run low to keep the vegetal cane congeners intact, it is rested rather than aged, so the focus is freshness and snap. Expect intense sugarcane sap, cut grass and a green, herbaceous lift, with white pepper and a saline, round finish. The strength gives it real presence without losing the bright cane core, which is exactly what a proper Ti Punch wants.
